Protein Pancakes

Okay, it's going to sound a little crazy but these 'pancakes' are delish!

1/2 cup of steel cut oats
1/2 cup of fat free cottage cheese
1/2 cup of egg whites
1 tablespoon of vanilla extract
1 tablespoon of cinnamon

Mix all ingredients in a bowl
Spray pan with cooking spray and cook batter 2 minutes on each side
Top with fruit and agave nectar.

Side note: Don't be surprised if your pancakes don't look like the picture but they will taste yummy just the same.
